第二次做馒头!

我的步骤:
1。新鲜酵母一包,用温水(体温,太烫容易杀死酵母菌)化开。
2。500-1000g面粉,跟酵母水一起揉,直到3光(既盆光,手光,面光—这是和面的最高境界)
3。放在温度35度左右的地方发酵40分钟;我放在暖气片上,用热的湿毛巾盖住。
4。感觉涨得差不多的时候(大约一倍),做馒头型。面板上撒点生粉,搓长条,刀切。不要太小,一般能长1-2倍(第一次就是对growth期望值太高了,结果很小)
5。开水蒸20分钟,看面团的大小即可停火.闷5~10分钟启锅盖.

看起来挺专业的,其实做好馒头也是不容易的。
